68th Annual Golden Globes Awards Show® Menu Unveiled By The Beverly Hilton Executive Chefs

BEVERLY HILLS, Calif. - What will the celebrities be dining on come Sunday, January 16, 2011 for the Golden Globes Awards Show®? Light, local and eco-friendly cuisine with an international flare created by The Beverly Hilton Executive Chef Suki Sugiura and Executive Pastry Chef Thomas Henzi.

On Thursday, January 6th, Executive Chefs Suki and Henzi of The Beverly Hilton previewed the Golden Globes Awards Show Menu (appetizer, entree and dessert) which will be catered to 1,300 of Hollywood's elite on Sunday, January 16, 2011 for the Hollywood Foreign Press Association's awards show, televised live from The Beverly Hilton's International Ballroom on NBC.

This year's "Hollywood light" menu is an elegant ensemble of cuisines from near and far including a Mediterranean inspired Appetizer of Grilled Eggplant with Edamame and Red Pepper Hummus with Marinated Artichoke and Arugula; a California inspired Combination Entrée of Grilled Tenderloin of Beef with Caramelized Fennel Marmalade and a Sautéed Mild Chili Sesame Crusted Filet of Pacific Sea Bass with a Light Cream of Fine Herb Turmeric Lemon Grass Sauce, Black Risotto Parmesan, and Young Bok Choy, Haricot Vert and Baby Carrots. The last bite before the show begins is a Dessert Trio designed by Executive Pastry Chef Thomas Henzi which includes California Almond Cake & Chocolate Royaltine Crunch Triangle & Fresh Berry Tart with Raspberry Coulis, Orange & Vanilla Chantilly Crème topped with a Chocolate Butterfly Silhouette. The menu typically requires six months of planning for a team of 40 chefs and 110 culinary staff members to prepare on show day.
