Chef Richard Teoh Proposes Refreshing Choices For Pleasure Dining At Genji, Hilton Petaling Jaya

PETALING JAYA, Malaysia - Synergizing with the recent celebrations of its RM50mil refurbishment project, themed “Hilton Petaling Jaya 2.0,” Hilton Petaling Jaya’s Japanese restaurant, Genji, today unveiled a new menu by Chef Richard Teoh. Available from October 1, Genji will serve up a refreshing dining experience by incorporating an array of modern and traditional dishes.

With more than 20 years of culinary experience at Genji, Chef Teoh, a veteran in Petaling Jaya’s dining scene for almost three decades, will take the opportunity to infuse a combination of Tokyo and Osaka-style cooking in his menu. While he believes that taste buds may be changing and evolving, and that variety is certainly the spice of life, certain fundamentals in Japanese cooking should not be tampered with. As such, Japanese culinary techniques are used to his greatest advantage while imagination and flair keeps up with ever changing times and tastes.

“This year, I wanted to incorporate flavors that I have been exposed to during my travels and training in Tokyo and Osaka while also including the essence of local flavors. Knowing what exactly to do with ingredients and what to create is challenging but this is where you can experiment with your flavors and be creative,” explained Chef Teoh.

While Chef Teoh’s renowned signature dishes such as Kaki Chili Mayo and Chicken Teriyaki will remain in the menu, the new Japanese dishes will have a local twist. Chef Teoh will entice diners seeking the bold and strong flavors found in Tokyo cuisine while also attracting diners that seek milder flavors traditionally found in Osaka cuisine.

Ingeniously marrying the wonderful fusion of Japanese cuisine from Tokyo and Osaka with elements pleasing to the local taste buds, Chef Teoh has introduced these dishes to the menu: Age Nasu Momiji Oroshi, Tokyo Salad, California Salad, Kaizen Mushi, Yosenabe, Sashimi Moriawase Tokujyo, Nigiri Omakase Mori, Cherashi Sushi Jyo, Jumbo Prawn Ura Maki, Shiromi Suimono, Gindara, Tempura Moriawase, Seafood Furai, Sansai Onigiri, Kaizen Set, Cha Soba & Soba Combo, Azuki Dorayaki and finally the Genji Combo.

Chef Teoh’s California Salad, a creation to aptly set the course for an irresistible meal ahead, features a mix of four types of fresh greens with a combination of diced fresh tuna, salmon and avocado, topped with mouthwatering home-made sauce and sprinkled with crab stick fitters, adding a tangy finish.

The Omakase Kaizeki, Chef Teoh’s recommendation which translates into “I leave it to you” is a set menu entirely decided by him based on what is fresh, seasonal and available on the day. Served as a multi-course traditional Japanese meal, it will showcase Chef Teoh’s skills with seasonal ingredients. The Zensai (appetiser) is first served, Dobin Mushi, a clear fish broth served in a tea pot with fresh Tsukuri (sashimi) or other seasonal ingredients. The next course along with this set is Yakimono, which is grilled fish, vegetables or beef garnished with edible leaves and flowers. The deep-fried items and the Shokuji, a wonderfully cooked rice dish, rounds up the meal very nicely. The Mizugashi (dessert) is then offered to complete this culinary journey.

Kare Udon, another of Chef Teoh’s creations, which is simply referred to as “Curry” Udon, is one of the most popular noodle dishes in Genji. This savoury dish presents rich flavours which satisfies the cravings of local taste buds with just a slurp of the udon guarded in Japanese curry.

The perfect way to end a culinary experience at Genji is with the Azuki Banana Dorayaki. This is a modified Japanese pancake filled with banana and red beans topped with melted chocolate and green tea ice-cream of your choice of flavors.

Prices for a la carte dishes range from RM15.00++ to RM400.00++. If a leisurely lunch is the plan of action for the day, the a la carte menu is available from noon to 2.30 p.m. on Mondays to Fridays. The a la carte menu takes dominance for dinner from 6.30 p.m. to 10.30 p.m. daily. Sundays see the chef whipping up a family feast for his weekend buffet priced at RM99++ onwards per adult from 11.30 a.m. to 2.30 p.m. Dinner also available priced at RM99++ per adult from 6.00 p.m. to 7.45 p.m. for the first session and RM109++ per adult from 8.00 p.m. to 10.30 p.m. for the second session.
