Hilton Cleveland Downtown Appoints Maxime Kien As Executive Chef

French Culinary Leader Brings More Than 20 Years Restaurant Operations and Menu Development Experience to New Position

CLEVELAND - The new Hilton Cleveland Downtown, scheduled to open on June 1, 2016, welcomes Executive Chef Maxime Kien. With a love of local ingredients highlighting fresh in-season flavors, he will oversee all culinary operations at the 600-room, convention style hotel including, restaurant concepts, menu development, catering, banquets and in-room dining.

"Chef Kien brings a wealth of experience and a diverse culinary background working at some of the most well-known hotels around the world," said Teri Agosta, general manager Hilton Cleveland Downtown. Hailing from the South of France in the Cote D'azur region surrounded by the bountiful, natural beauty that is the French Riviera, Kien earned three French culinary degrees by the age of 20. Infusing his creative genius into local food, he pulls from his geographically diverse education and career including London, Atlanta, New Orleans and Las Vegas. Prior to his new role at Hilton Cleveland Downtown, Kien successfully led 200 chefs and 18 sous chefs, created menus and maintained costs and operations at Caesar's Entertainment in Las Vegas. Kien has also held positions with the Ritz-Carlton and the Hyatt Regency.

"Food should not be complicated," said Kien. "Take a great farm product, treat it properly and delight the palette. My roots are in Mediterranean flavors such as, basil, tomato and olive, but it's important for me to understand the influences and culinary tastes of this dynamic city and create fresh, local and in-season dishes for Cleveland."

Kien's cuisine will allow customers to identify flavors and textures and understand the basic essence of what they are eating using simple garnishes and seasonal meats. Cleveland has an extraordinary food scene and the appointment of Chef Maxime Kien is the first piece of the puzzle to establish the Hilton Cleveland Downtown's dynamic culinary footprint.
