Hilton Hawaiian Village Waikiki Beach Resort Appoints Jamon Harper Executive Pastry Chef

HONOLULU - Hilton Hawaiian Village Waikiki Beach Resort has welcomed Jamon Harper to the resort as executive pastry chef. He brings 15 years of culinary experience at AAA Four and Five Diamond Hotels to the beachfront resort. Harper previously held executive pastry chef positions at Fairmont Sonoma Mission Inn in California, Fairmont Orchid on Hawaii Island and Four Seasons Resort, West Palm Beach, Florida. He was also assistant executive pastry chef at the AAAFive Diamond Four Seasons Hotel Boston, as well as pastry chef at luxury resorts and restaurants in Barbados, West Indies.

"We are indeed thrilled to have Jamon as part of our team at Hilton Hawaiian Village Waikiki Beach Resort," said Tracy Walker, general manager. "Jamon's creativity and extensive experience will take our pastry and dessert offerings to a whole new level."

Harper got started in the kitchen cooking at a very young age with his mother, fascinated by her innate ability to create consistently perfect pastries and desserts by memory. He cites Burt Wolf and Anthony Bourdain as highly influential figures that helped cement his desire for the culinary arts. He also feels that his five-year stint in his teens as an architectural draftsman even further helped cultivate his artistic abilities and his love for creativity and design.

Immediately following his graduation from Johnson & Wales University in Providence, Rhode Island, Harper joined Walter's Restaurant Group, where he produced regional Italian, Jewish-Italian and Medieval desserts. During this time, Harper participated in both culinary and pastry events for the James Beard House.

Known for his seriously decadent gourmet desserts, Harper's personality also has a whimsical side. He says that he loves the idea of taking foods that people have a great affinity for and reinterpreting them.

"I have a fascination for popcorn and it has become one of my signature ingredients," said Harper. "It brings everyone back to their childhood and it's great fun to create new dishes with something that is so loved.

Hilton Hawaiian Village is proud to feature its "Hawaii's Best, Locally Sourced" program throughout the resort-some of the resort's outlets procure as much as 80% of their ingredients within the islands. Harper says the farm-to-table philosophy will weigh prominently in his new role at Hilton Hawaiian Village as he begins to redesign the banquet and restaurant dessert menus.

"You're going to see lilikoi (passion fruit) --one of my favorite fruits-and other Hawaii favorites in my dishes," he said. "There is such a bounty of fresh ingredients here that there is really no reason to look outside of Hawaii."
