Hilton Hawaiian Village Waikiki Beach Resort Names Matt Alleshouse Chef De Cuisine

HONOLULU - Hilton Hawaiian Village Waikiki Beach Resort has named Matt Alleshouse as chef de cuisine, overseeing the Bali Steak & Seafood Restaurant. Bali Steak & Seafood is the culinary landmark at the Hilton Hawaiian Village Waikiki Beach Resort, and has been named a Four-Diamond Restaurant by AAA for 22 consecutive years.

Alleshouse was most recently at the Radisson Hotel Yuma in Yuma, Ariz., where he served as executive chef/food and beverage director. He also owned and operated Urban Chefs AZ, a catering consulting company specializing in menu design and restaurant concepts. Alleshouse also has had prior experience with Smith Hospitality, EuroFresh Farms, and within the Hilton Family as well at the Arizona Biltmore, a Waldorf Astoria Hotel. He earned an associate degree at the Pennsylvania Institute of Culinary Arts.

One of Alleshouse's career highlights came in 2004 with the opportunity to cook at the esteemed James Beard House in New York City as part of the Arizona Biltmore team. "It was extremely challenging because of where we were cooking and who we were cooking for, not to mention 15-hour days in advance prepping and preparing, but we had nothing but fun," said Alleshouse. "It was one of the most memorable things in which I have had the honor to be involved."
