Hilton Hotels in Edinburgh Observe Earth Hour
West End Hotels Agree to Turn Off Their Lights in Support of Energy Conservation

Now in its fourth year, Earth Hour is an annual event organised by the World Wildlife Foundation (WWF) which aims to create awareness about climate change and promotes how even simple steps can be taken to make a significant impact in reducing greenhouse gases and addressing climate change.
Earth Hour will be celebrated by Hilton Worldwide across the company's brands and regions through a variety of activities including; switching off main building exterior lighting and rooftop neon signage, encouraging guests to switch off their room lights and staging special candle-lit Earth Hour dinners and events to raise awareness of the cause.
In honour of the occasion, both Hilton Edinburgh Grosvenor's and Caledonian Hilton's head chefs have created tantalising Scottish Earth Hour menus which will be served by candlelight in the hotels' restaurants renowned for their Scottish cuisine.
All of the ingredients for the fiercely Scottish menus have been sourced in an environmentally friendly manner in keeping with the Earth Hour theme.
The Townhouse Restaurant at Hilton Edinburgh Grosvenor will be serving a selection of starters to entice guests including smoked haddock potato cake with leek cream, chicken pate, homemade bread and onion jam and broccoli and Dunsyre blue soup with onion fritter.
Wholesome main courses have been given a significant Scottish twist with dishes that comprise lamb chops, burnt onion mash and Drambuie essence, Grampian chicken, black pudding and Arran mustard cream, and spring root vegetable stew in a crunchy bread basket.
Finally, guests will be invited to finish off their meal with a choice of traditional Scottish desserts. For those who would prefer to finish the meal with a savory option, Smoked Mull cheddar with oatcakes will be available.
The Pompadour at Caledonian Hilton will be serving a five course tasting menu showcasing the very best in locally sourced Scottish produce. Guests can enjoy an amuse bouche of Scottish crab with cucumber lasagne, salad of baby artichokes with truffle dressing and black crowdie cheese before a light starter of warmed 'hot' smoked salmon with a shallot and caper crushed potato is served.
The mouthwatering main will be 28 day hung fillet of "Black Gold" beef on a buttered fondant, young garden vegetables and red wine sauce and dessert will be timeless Scottish favourite, Cranachan.
Dinner at Hilton Edinburgh Grosvenor will be available at £21.95 per person and served in the Townhouse Restaurant from 6.00-9.30pm.
Dinner at Caledonian Hilton will be available at £50 per person and served in The Pompadour from 7.00-9.30pm.
Earth Hour will officially take place between the hours of 8.30-9.30pm local time and it is expected that more than a billion people and organisations around the world will turn off their lights in support of energy conservation.
Hilton Worldwide's support for Earth Hour is in line with the company's overall corporate social responsibility initiatives. The organisation recently announced new sustainability measures which outline plans to reduce energy consumption, waste output and CO2 emissions by 20% each by 2014.
