Hilton Seychelles Labriz Resort & Spa Appoints Josu Sedano Executive Chef

SEYCHELLES - Josu Sedano was appointed executive chef of Hilton Seychelles Labriz Resort & Spa in July 2015. In addition to overseeing all Food & Beverage sectors at the resort, including seven restaurants and 24 hour in-villa dining, Chef Josu’s responsibilities also include the challenging task of managing more than 70 chefs and team members at the resort, as well as supervising training, development and menu creation.

Hailing from Bilbao, Spain, Chef Josu trained at the renowned Casa Vasca Culinary Academy, progressing through the ranks across an array of fine-dining and Michelin-Starred establishments. In 2004, Josu was appointed head chef for InterContinental Hotels Phoenicia Beirut and from there, assisted with openings in Spain as well as placements in Qatar and the 2-Michelin-Starred La Rive at the Amstel InterContinental in Amsterdam. From 2008 to 2010 he worked with Eurostars as corporate chef and assisted with the opening of their landmark Madrid Tower. In 2010 Josu relocated to Portugal to reopen the Vidago Palace Hotel as executive chef and F&B director for the Leading Hotels of The World property. Chef Josu then moved to the Caribbean in 2012 to lead F&B operations at Seven Stars Resorts. Joining the Hilton Worldwide team in 2013 with a position in Malabo, Equatorial Guinea, Josu continued to display his culinary skills and flair for extraordinary menu creation.

Chef Josu is passionate about using locally sourced produce, and exploring the local Seychelloise creole flavours. He also draws on his vast international experience to further develop the truly unique Island Kitchen Concept at the resort and enhance the culinary experience for guests at Hilton Seychelles Labriz Resort & Spa.
