House smoked salmon inspires fresh, new breakfast dish at Hilton Sydney

SYDNEY - The arrival of Hilton Sydney's new executive chef, Carl Middleton and the introduction of his own house smoked salmon recipe has spearheaded the launch of a brand new 'signature' breakfast dish at glass brasserie. Introducing; Beach wood house smoked salmon with English potato scones, pan roasted asparagus, free range scrambled eggs & baby watercress.
Carl's house smoked salmon is the key component of the dish, available as part of the bountiful breakfast buffet menu. Tasmanian farm salmon is cured in salt and sugar for 24 hours, rinsed and then marinated in vegetable oil before a cold smoking process in Hilton Sydney's newly installed in-house smoking oven. The smoking process uses beach wood to achieve a unique, delicious flavour.
With Sydney's breakfast culture boasting an undeniable charm, guests can now indulge in the best smoked salmon in the city whilst enjoying a captivating view of the Queen Victoria Building from glass brasserie's 13 metre floor to ceiling windows. What better way to start the day?
