il Cielo Restaurant Presents Novel Italian Experience At Hilton Singapore

SINGAPORE - Located on the top floor of the 24-storey hotel on Orchard Road, the stylish, contemporary il Cielo (which means 'the sky') restaurant is set to raise new culinary standards in the city with handcrafted homemade foods, natural and organic ingredients as well as seasonal produce from Italy.
Passionate Italian Concept: Natural, Sustainable, Homemade
Birthed from the passion for quality living - eating well, the environment and Italian nostalgia, the chefs at helm - Sandro Falbo, Hilton Singapore Executive Chef and Omar Bernardi, Italian Chef - use natural and organic ingredients including organic flours, seasonal vegetables and herbs, sustainable seafood sources as well as fresh and natural cuts such as natural Meyer rib-eye to prepare the dishes. Special wood pieces from olive and cedar trees are also used in cooking to lend smoky aroma to the dishes; recreating flavors that was lost with modernization.
Dining at il Cielo begins with homemade truffle butter with black olive breads and the original grissini. Thereafter diners can enjoy specialties such as fresh Burrata mozzarella filled with bufala made upon order - a first in Singapore - and Bosco, a crispy thin Rome-style pizza made with flour from Vesuviana, topped with homemade Italian sausages. Along with other Rome-style pizzas is the wide range of homemade pastas made of organic flours including the rare kamut (an ancient kind of grain that is believed to have originated from Egypt), buckwheat and spelt.
Flavors of days past are replicated at il Cielo. Diners can enjoy the aromas and flavors of Italian cuisine the way they used to be prepared before modern day kitchen aids replaced traditional cooking over wood fire. For instance, Herb-crusted Ocean Trout placed on olive wood is fast roasted in the oven for an earthy flavor. Rome-style pizzas made using mostly Italian produce are baked in open fire brick oven. Soon meat lovers can also look forward to relishing time-honored recipes such as Wagyu beef slow-cooked for 16 hours.
All year round, the il Cielo menu will adapt to the seasonal changes featuring the best of northern Italy during winter months and southern regions of the country during summer months. An avid advocate for natural, organic foods from sustainable sources, Chef Sandro worked with Italian purveyors to supply produce from Italy, other parts of Europe, Japan, USA and New Zealand to ensure quality the Italian way.
Modern Space for Urban Cityscape
Set on the top floor of the Hilton hotel, the il Cielo restaurant has a capacity for 48 persons with 32 seats indoors including a private dining room for 8 guests as well as 16 seats by the pool side. With a panoramic view of Orchard Road skyline, the interiors and surroundings of the poolside provide an urban resort feel.
Designed by Wilson Associates, the use of chic, modern and masculine tones as well as wood and glass complement the surroundings of the restaurant. The contemporary geometrical trellis and sliding glass panel screens offer a sense of space and make way for a relaxing pool view from the indoor area. Within the restaurant interiors, the soft furnishings add an elegant touch to the contemporary clean lines and simple bold warm colours. Additionally, the existing high ceiling was dramatized with various pendants, ceiling fans and an iconic driftwood sculpture to accentuate space.
At sundown, diners in the restaurant can enjoy a different alluring ambience in a semialfresco setting. The pool area lights with the modern cityscape of Orchard Road and the pool as the backdrop, and when weather permits, the versatile glass screens slide open to let the outdoor breeze in.
