SAN FRANCISCO - Hilton San Francisco Union Square today announced the appointment of Sergio Shantoja as the executive chef at the hotel's innovative eatery, Urban Tavern Restaurant. As the head of the culinary team of Urban Tavern, Shantoja will oversee the development and execution of the restaurant's comfort food breakfast, lunch and dinner menus.

Chef Shantoja joins Hilton San Francisco Union Square culinary team from Boston. Shantoja began his career in the restaurant business at just 15 years old performing various kitchen tasks in a small Italian restaurant. For the next 16 years Shantoja continued working in fine dining restaurants including Mare, an organic costal Italian restaurant in Boston's North End as well as Miel Brasserie Provençale at the Intercontinental Boston where he had the opportunity to learn classical French cuisine. These experiences have lead Chef Shantoja to experiment with seasonal and local products and develop a passion for sustainable cuisine. When he is not in the kitchen Chef Shantoja is browsing the local markets or following his passion for landscape photography.
