The Beverly Hilton Appoints Matthew Morgan As Chef De Cuisine

California Native to Oversee Legendary Hotel’s Food and Beverage Outlets

BEVERLY HILLS, Calif. - The Beverly Hilton, a Forbes Four Star hotel, today announced the appointment of Matthew Morgan to the position of chef de cuisine. In his new role, Morgan will oversee the menu of the hotel's three food and beverage outlets including the pool-side CIRCA 55 Restaurant, the Lobby Lounge and Trader Vic's Lounge. Morgan, a California native, brings with him a new culinary perspective with an emphasis on re-imagined classic dishes and high-quality ingredients.

Most recently, Chef Morgan served as the senior sous chef at The Beverly Hilton, contributing to the day-to-day operations of the restaurants. During his time at The Beverly Hilton, Morgan assisted in menu development for two HBO Golden Globe Awards after parties as well as dozens of other star-studded events. Prior to this, Morgan was part of the culinary team at Ritz-Carlton Marina Del Rey and Ritz-Carlton Phoenix.

When looking for inspiration, Chef Morgan visits local farmers markets searching for the freshest seasonal produce that influence his dishes. He enjoys experimenting with nostalgic, comfort foods like mac-and-cheese and adding new flavors and unexpected ingredients. When he is not in the kitchen, Chef Morgan enjoys tending to his 60-foot garden at home where he is growing nearly 30 different crops including herbs, berries, a variety of tomatoes, eggplant and more.

"I believe the greatest flavors start in the ground," said Chef Morgan. "Working in my garden allows me to see, smell and touch the produce so I know when certain ingredients are at the peak of flavor and ready to be served to our guests."

Offering a seasonal, fresh menu, chic décor and poolside dining, the hotel's main restaurant, CIRCA 55 is open daily from 6:30 a.m. to 10:00 p.m. The Sunday Champagne Brunch, a Beverly Hills tradition, is served from 11:00 a.m. to 3:00 p.m.
