White Restaurant New Summer Menu Introduced at Hilton Auckland

AUCKLAND, New Zealand - The best of our New Zealand summer produce is being showcased throughout the new mouth-watering menu at Hilton Auckland’s White Restaurant.
White’s 2010 summer menu is bursting with fresh ingredients and HOMEGROWN flavours – Hawke’s Bay lamb, Farm Gate chicken, venison, Leigh snapper, Marlborough clams, green-lipped mussels, accompanied with seasonal vegetables and enhanced by local herbs.
“When I decide the menu, I look for what’s in season, what’s fresh,” says Award-winning Executive Chef, Cristiano De Martin. For example, the entrée of Budino of Crescent Dairy goat cheese ricotta with grilled zucchini and roast pepper dressing is “fresh, light and full of summer flavour”. Deserts feature stone fruits and summer berries with the ‘Passion fruit and coconut baked Alaska on raspberry coulis’ being one of Chef’s recommendations.
White’s HOMEGROWN philosophy means it sources as much as possible, including spices, from New Zealand and conveys to diners precisely where their food has come from, for example the saffron is grown in Central Otago and the paprika comes from Hawke’s Bay.
Indigenous flavours are evident in the mains, such as the pan roasted Leigh snapper on sweetcorn cream, poached spinach, Hawke’s Bay paprika and citrus basil dressing; and Chef’s recommendation of seafood selection in a rich tomato and herb sauce dusted with horopito flakes.
De Martin emphasises that White’s strong relationships with suppliers of New Zealand’s best produce is growing and this ensures ingredients are of the highest quality. Fish gets to the restaurant within a day of being caught, and the high standard of White’s beef and lamb dishes has recently seen the restaurant awarded the New Zealand Beef and Lamb Hallmark of Excellence.
